Salmon-Q with Greens

Ingredients

  • 1 pound salmon filet (preferably, sockeye) – cut into 4 oz portions
  • 1/4 cup Pitmaster LT’s BBQ sauce (Classic or Spicy)
  • 1 Tbsp honey
  • 1/2 pound greens (e.g., spinach, kale, Swiss chard, etc.)
  • 2 tsp lemon juice
  • salt, black pepper and red pepper flakes to taste
 

Cooking Directions

  1. Warm a non-stick sauté pan to medium heat;
  2. Place salmon in pan, flesh side down, and sauté for 3-5 minutes.  Flip the salmon, and sauté for another 3-5 minutes or until cooked to preference;
  3. Pour the Pitmaster LT’s BBQ sauce and honey into a small microwavable bowl, and microwave for approx. 15 seconds;
  4. Using a sauce brush, apply multiple coats of the sauce and honey mixture to the salmon to glaze it, and flip the salmon until carmelized;
  5. In a separate pan warmed to medium heat, add the greens with a small amount of water. Sauté greens until wilted, then add lemon juice, salt, black pepper and red pepper flakes;
  6. Neatly arrange the cooked salmon and greens on a dining plate and enjoy!
