Pitmaster Ribs

Ingredients

  • Full slab(s) of St. Louis-style spare ribs
  • 1 jar Pitmaster LT’s Pork & Poultry rub
  • 1 bottle Pacific Island American soy sauce
  • 1 bottle Pitmaster LT’s Spicy BBQ sauce

Prepping Directions

  1. Place uncooked ribs in an aluminum pan;
  2. Douse ribs with Pacific Island soy sauce (NOTE: do not add liquid smoke or Worcestershire sauce);
  3. Coat top side of ribs with Pork & Poultry rub;
  4. Cover with lid or foil and refrigerate for 12 hours

Cooking Directions

  1. If using a charcoal grill, place adequate charcoal and barbecue wood(s) of choice (e.g., apple, alder, cherry, hickory, maple, mesquite, oak, pecan) in the grill and light the coals;
  2. If using a charcoal grill, preheat to 300 degrees.  If using a gas grill, preheat to 225 degrees;
  3. Place meat on cooking grates, top side facing up;
  4. Close grill and maintain a cooking temp of 225 degrees for 3 – 4 hours or until meat is adequately cooked;
  5. Brush top side of ribs with Spicy BBQ sauce and remain cooking on grill for 5 minutes to glaze;
  6. Remove from grill and enjoy!
