Douse ribs with Pacific Island soy sauce (NOTE: do not add liquid smoke or Worcestershire sauce);
Coat top side of ribs with Pork & Poultry rub;
Cover with lid or foil and refrigerate for 12 hours
Cooking Directions
If using a charcoal grill, place adequate charcoal and barbecue wood(s) of choice (e.g., apple, alder, cherry, hickory, maple, mesquite, oak, pecan) in the grill and light the coals;
If using a charcoal grill, preheat to 300 degrees. If using a gas grill, preheat to 225 degrees;
Place meat on cooking grates, top side facing up;
Close grill and maintain a cooking temp of 225 degrees for 3 – 4 hours or until meat is adequately cooked;
Brush top side of ribs with Spicy BBQ sauce and remain cooking on grill for 5 minutes to glaze;
