LTea Smoked Chicken

 

Ingredients

  • 3-4 chicken breast cutlets
  • 1/3 cup Lapsang souchong tea (loose leaf)
  • 1 bottle Pitmaster LT’s Pork & Poultry rub
  • 1 bottle Pitmaster LT’s BBQ sauce (Classic or Spicy)

 

Equipment

  • Steamer pot assembly (pot with steam insert and lid)
  • 10-inch non-stick sauté pan
  • Basting brush
  • Aluminum foil

 

Cooking Directions

  1. With the steam insert removed, line the inside of the pot with foil to create a foil basket therein;
  2. Deposit Lapsang souchong tea into the foil basket to create an even layer of tea along the entire base of the foil-covered pot;
  3. Place the pot on the stove, and place the steam insert atop the pot. Turn the stove on medium heat;
  4. While the pot assembly is warming, rinse the chicken breast cutlets and pat them dry with clean paper towel. Then, sprinkle coat both sides of the cutlets with Pitmaster LT’s Pork & Poultry rub;
  5. Neatly place coated chicken breast cutlets in the steam insert to create a single layer of chicken with minimal overlapping. Place the lid atop the stem insert;
  6. Cover the lid with aluminum foil to seal the lid (prevents generated tea smoke from escaping the steamer pot assembly);
  7. Cook chicken for 10 minutes on medium-high heat. Then, remove the lid and turn over the cutlets. Cook chicken for another 10 minutes or until thoroughly cooked (NOTE: The cooking tea will emit smoke that is absorbed by the chicken);
  8. Transfer cooked chicken from steamer pot assembly to saute pan on the stove, and warm pan to medium heat;
  9. Brush a layer of Pitmaster LT’s BBQ sauce onto both sides of the chicken – cooking each side until sauce caramelizes on that side;
  10. Serve the LTea smoked chicken with side items of your choice and enjoy!
